- 3/4 to 1 cup milk
- 2 tablespoons white vinegar
- 1 cup all purpose flour
- 2 tablespoons white sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 egg
- 2 tablespoons butter, melted
- cooking spray
Directions:
- Mix together milk and vinegar. Allow to sit for 5 minutes to sour. (You can substitute milk and vinegar for buttermilk.)
- Once milk has soured, whisk in melted butter and egg.
- In a separate bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- Pour wet ingredients over the dry ingredients and whisk until smooth. If the batter is a little too thick you can add a splash of milk to the batter.
- Heat a large skillet over medium and spray it with cooking spray. Pour 1/4 cup spoonfuls of batter onto heated skillet. Cook until bubbles form on the surface and then turn over with a spatula and cook until browned on the other side.
